Garlic Confit

Roasted garlic can elevate your dishes and take them to the next level. Its creamy, savory taste complements simple dishes and gives them the flavor boost they may need. I like to keep a jar of roasted garlic submerged in extra-virgin olive oil ready to use when I cook or to top hummus and other dips. . As a child, I was convinced that garlic was not my preferred flavor. Yet, as I grew up and began experimenting with cooking, I was drawn to its unique aroma and flavor. The way garlic enhances the taste of any dish is truly remarkable. It's a flavor I can't imagine my kitchen without.
Ingredients:
4 whole heads of garlic, peeled
1 cup Extra virgin olive oil
2 sprigs of rosemary
Rustic bread
Steps:
Preheat the oven to 400°F.
Combine the garlic, olive oil, and one spring of rosemary in a small baking pan.
Roast in the oven for about 30 minutes until soft and lightly browned.
Allow the pan to cool, then pour the olive oil and the garlic into a jar or a ceramic dish.
Garnish with the remaining sprig of rosemary and serve with crusty bread.
Leftovers:
After using all the roasted garlic, repurpose the leftover olive oil to create dressings or as a finishing drizzle. The oil will be infused with a delicious garlic flavor and ready for use.
