Ingredients:
2 ½ cups almond flour
1 cup sugar
2 large egg whites at room temperature
1 tsp amaretto liquor
¼ teaspoon sea salt
½ cup powder sugar
Steps:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Line another sheet pan with powdered sugar.
In a large bowl, combine the almond flour and sugar.
In a separate bowl, combine the egg whites and salt, then whisk until soft peaks form. Gently stir in the amaretto.
Gradually add the almond flour mixture to the egg whites, stirring with a wooden spoon each time until a soft, pliable paste is formed. At this stage, you can finish mixing with your hands.
Use a scale or a tablespoon to portion out the cookie dough, then roll it into small balls.
Roll the cookie balls in the powdered sugar to coat well, and place them in rows on the lined baking sheet.
Using the back of a small glass or ramekin, gently press down on each cookie ball to flatten them. The small cracks that form will contribute to a rustic appearance.
Bake for 16-18 minutes, adjusting based on your oven’s performance.
The cookies should be lightly browned but still very soft in the center.
Once ready, remove them from the oven and let them cool for 5 minutes. Afterward, transfer them to a rack to cool completely.
Store the cookies in an airtight container, or divide them into two ziplock bags. Enjoy!
