Fried Eggs & Pork

Pork afelia is a traditional dish from my home island of Cyprus. The meat is braised for about 45 minutes until it becomes super tender. Then, it is finished with red wine, lemon, and crushed coriander seeds, the key ingredient distinct from this simple dish. At our house, any leftover meat from dinner is transformed into a hearty brunch or lunch the next day! Add two eggs, a few pickled peppers, and some small tomatoes roasted in the pan with the leftover meat for a mouthwatering meal.
Ingredients:
½ cup Leftover meat per person
½ cup chopped pickled peppers
½ cup mushrooms, sliced
2 Campari tomatoes, cut in half
2 eggs
½ tsp Fine Red pepper flakes such as Boukovo or Aleppo
¼ tsp sea salt
4 tbsp olive oil, divided
2 tsp chopped parsley
Steps:
Heat the olive oil in the skillet on low temperature. Crack the eggs into the skillet and cook for about 30 seconds.
Add the Pork, mushrooms, peppers, and tomatoes alongside the eggs and cook for another 2 minutes until the eggs are cooked to your preference.
Transfer the eggs, meat, and vegetables to a plate. Drizzle the remaining olive oil over them, then sprinkle with salt, pepper flakes, and parsley.
Notes:
