Egg, Halloumi, & Tomato Toastie

Forget the usual scrambled eggs and bacon and treat yourself with this easy gourmet breakfast sandwich. It combines eggs, halloumi cheese, juicy tomatoes, and fresh basil in a thin pita, making a mouthwatering toastie. The halloumi is bathed in the egg mixture and cooks to a perfectly soft texture, giving you a delightful experience with every bite. This meal is perfect for a light and tasty summer breakfast or brunch when the tomatoes are most flavorful.
Ingredients:
2 thin pitas, or tortillas
2 slices of halloumi cheese, diced
8 teardrop or cherry tomatoes, cut in half
6 basil leaves, 4 torn and 2 whole for garnish
4 large organic eggs, lightly beaten
A pinch of sea salt
¼ tsp black pepper
½ tsp Greek oregano
2 tbsp olive oil
Steps:
Preheat a non-stick skillet over medium heat.
Thoroughly mix all ingredients in a small bowl, excluding the olive oil and pitas.
Drizzle one teaspoon of olive oil into the skillet, then pour half of the egg mixture into the skillet, swirling it to cover the bottom evenly.
Cook for about a minute, then drizzle one teaspoon of olive oil over the surface of the omelet. Place a pita on top and gently press down with a flat spatula.
Cook for an additional 30 seconds, then carefully flip the omelet onto a cutting board with the pita underneath. Add the basil and immediately fold it in half, pressing down lightly to bond the ingredients together.
Repeat this process with the remaining half of the egg mixture.
Slice the toasties in half, garnish with basil, and enjoy!
