White Bean Roasted Tomato Hummus

Ingredients:
3 tablespoons of olive oil, divided
1 cup of roasted cherry tomatoes
1 shallot, roasted and diced
4 cloves of garlic, peeled
1 Red chile, roasted
1 teaspoon of kosher salt
1 teaspoon of freshly ground pepper
3 garlic cloves
1 lemon, both zested and juiced
1 cup of cooked white beans or a 15-ounce can
1/4 cup of chopped cilantro
1/4 cup of crumbled feta cheese (optional)

Steps:
Preheat the oven to 350F and line a baking sheet with parchment paper.
Combine the roasted cherry tomatoes, shallots, garlic, and chili in a medium bowl. Add one tablespoon of olive oil, a pinch of salt, and pepper. Toss the mixture and spread it out evenly on the prepared baking sheet.
Roast the vegetables for 20 minutes or until they are tender.
In the same bowl, whisk together 2 tablespoons of extra virgin olive oil, lemon zest, and juice. Add the cooked white beans to the mixture.
Once the vegetables are tender, let them cool for a few minutes. Then, combine them with the white bean mixture in a food processor and blend until completely smooth (this should take around 5 minutes).
Adjust the seasoning and transfer the hummus to a serving dish.
Top the hummus with roasted tomatoes, cilantro, feta cheese (if using), chilis, and zaatar, and serve with pita chips. Enjoy!
