Grilled Halloumi Cheese

Let’s talk about everyone’s favorite cheese, Halloumi! This delightful, addictive cheese is the perfect addition to any meze spread and can be served with pita or rustic bread. In Cyprus, we have countless ways to enjoy this amazing cheese that behaves and tastes like no other. Its remarkable texture and high melting point make it a versatile option for grilling, frying, baking, or enjoying as is. I am very excited to share this simple but fantastic recipe with you, and it's just one of many Halloumi preparations to come.
Ingredients:
1 block of halloumi cheese
1 tablespoon of olive oil
¼ cup EVOO, the best quality you can find
1 garlic clove, minced
1 tsp freshly coarse ground pepper
1 lemon, zested and cut into quarters
1 sprig of mint
Rustic bread for serving
Steps:
Remove the halloumi cheese from its package and place it on two folded paper towels. Cover it and refrigerate overnight or for at least two hours.
Mix ¼ cup of EVOO with garlic and lemon zest in a bowl.
Carefully open the Halloumi cheese along its natural split to divide it into two pieces.
Add the olive oil to a plate and coat the halloumi slices on both sides.
Heat a grill pan or a non-stick skillet over high heat.
Grill the Halloumi for 30 seconds or until the cheese is golden brown. Turn the cheese over and repeat the cooking process on the opposite side.
Serve the halloumi on a round dish, drizzling it with the EVOO mixture. Squeeze some lemon juice on top, sprinkle with ground pepper, and garnish with mint leaves. Enjoy with fresh rustic bread or pita bread.
Notes:
It is very important to cook the halloumi after it has dried and is free of visible moisture.
You can cut each half into two pieces, serving one per person.
