Almond Orange Cake (GF)

This delightful almond and orange cake is a sensational treat that’s surprisingly easy to prepare, making it perfect for afternoon coffee. Ingredients:
4 large eggs, divided
¾ cup (150 gr) sugar
½ cup freshly squeezed orange juice and zest of one orange
½ cup (120 ml) extra virgin olive oil
½ teaspoon vanilla extract
3 cups (300 gr) almond flour
½ tablespoon baking powder
Powdered sugar for dusting
Steps:
Line or grease a 9-inch round springform round pan. Preheat the oven to 350F (180C).
In a large bowl, combine the sugar and egg yolks. Beat with a hand mixer until the mixture is light in color.
Add the orange zest, orange juice, oil, and almond vanilla. Continue beating for two more minutes.
Gradually add the almond flour and baking powder, mixing until well combined.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
Pour the batter into the prepared pan and smooth the top to level it.
Bake for about 40 minutes and until golden brown. Test the cake with a toothpick to ensure it comes out clean.
Allow the cake to cool, then transfer it to a cake stand or beautiful platter.
